This is a really tasty and health take on ordinary apple crumble. The addition of dates give it a sweet toffee taste without adding sugar and the pumpkin seeds give an added boost of protein, healthy oil and crunch. Easy to make, can be cooked in the oven or air fryer.
Ingredients
Serves 4-6
100g Fresh Wholemeal Bread Crumbs
50g Rolled Oats
30g Butter
1 Tablespoon Pumpkin Seeds
4 Apples Peeled and Cored (Leave Skins on)
100g Chopped Dates
200ml Water
2 Tablespoons Granulated Sweetener (optional)
Method
Mix the breadcrumbs, Oats, Sweetener (if using) and butter together by hand, mixing it through your fingers to form crumbs. Mix in the pumpkin seeds.
Next chop the apples and place them into the bottom of an oven proof dish. Mix in the dates and add water. Top with crumble mix. Bake in the oven or air fryer at 180 degrees for 20-30 minutes or until golden brown on top.
