Caesar Salad Inspired Crustless Quiche

This recipe was inspired after having really delicious Caesar salad in Pattersons Cafe in Lifford, Donegal. Using shredded chicken and flavoursome home cooked ham along with fresh grated Parmesan cheese gives this dish a lovely taste and texture. It is really easy to make and can be air fried or oven baked and is also delicious eaten hot or cold.


Ingredients

Serves 8-12


Twelve Eggs

100g Light Cream Cheese

4 Tablespoons Fresh Parmesan Cheese

30g Cheddar cheese

100g Cooked Chicken, shredded

100g Cooked Ham, shredded

2 Tablespoons Gram Flour or preferred flour

100ml Unsweetened Almond Milk or preferred milk

1 Teaspoon Garlic Granules

1 Teaspoon Oregano

1 Teaspoon Parsley


Beat all ingredients except chicken and ham together in a bowl. Pour the mixture into an oiled quiche dish or into an oiled oven proof dish. Add the chicken and ham. Preheat the air fryer or oven to180 degrees and cook for 25-45 minutes or until firm to touch.


These can also be done as 12 muffins in a muffin tray. Cook for 15-25 mins 180 degrees or until firm.
