Chickpea, Sweet Potato & Red Lentil Curry - Slow Cooker

This delicious curry is so easy to make and it really does taste amazing. Adding the chickpeas and lentils adds a fabulous boost of protein making this dish very filling and satisfying.


Ingredients

200g Sweet Potato

1 Onion Diced

1 Can of Chickpeas

1 Can Chopped Tomatoes

100g Red Lentils

2 Teaspoons Garlic Granules

2 Tablespoons Curry Powder

1/2 Tablespoon Ground Cumin

1 Tablespoon Garam Masala

1 Vegetable Stock Cube


Method

Prepare your sweet potato and onion, peel and chop and add to the slow cooker. Next add the full tin of chickpeas including juice, the tinned tomatoes, lentils, garlic, curry, cumin, garam masala and stock cube. Fill one of the cans with water and pour into the pot. Mix well. Cook on high for 3-4 hours or low for 6-8 hours. Cooking for the full 8 hours will give a thicker consistency and intensify the flavours.
