Makes 24
130g Prunes
4 Tablespoons Coco Powder
50g Self Raising Flour, sifted
1 Teaspoon Baking Powder
4 Eggs Separated
28g Granulated Sweetener
2 Teaspoons Orange Flavouring
Grated Rind of 1 Orange
200ml Boiled Hot Water
For the Topping:
2 Tubs Quark
2 Tablespoons Coco Powder
8-12 Tablespoons Sweetener (preferred taste)
2 Teaspoons Orange Flavouring
Place the prunes in a blender with a little bit of the hot water and blend into a smooth paste. Separate the eggs and place the whites into a stainless steel bowl if possible and whisk to form soft peaks as if making meringues.
In a separate bowl, combine the blitzed prunes, coco powder, flour, baking powder, flavouring, sweetener, egg yolks and orange rind along with the remaining hot water, once fully combined fold in the egg whites. Spoon into muffin tins lined with cupcake cases and bake at 170 for 10-12 minutes until cocktail stick inserted in the middle comes out clean. Remove from tin and cool on a wire rack.
For the Topping:
Combine the quark, Coco Powder, Sweetener and flavouring and spoon on top of the cooled cakes. You could then slice the remaining orange to decorate.
