Courgettes or zucchini, as they are known, are delicious and a very versatile vegetable but did you know the beautiful flowers from these vegetables are also edible and delicious stuffed with cream cheese and lightly battered. Here I have kept it really simply by using a basic brand shop bought batter mix from Asda and Philadelphia light garlic and herb cream cheese. They literally take minutes to make, taste delicious and look extremely impressive. They are only around 55 calories each and make an excellent starter to any meal.
Ingredients
Serves 4
8 Courgette Flowers
160g Philadelphia Light Garlic & Herb
1 Packet Asda Smart Price Batter Mix
Oil for Shallow Frying
Method
Gently wash each flower and remove the pistol/stigma (centre pollen). Fill with 20g garlic and herb Philadelphia light. Make up the batter as per packet instructions and mix in a extra 50ml water.
Heat oil in a pan about 2 inches in height) or deep fat fryer until hot. Carefully dip each filled flower into batter and fry for 2 minutes turning over on each side. Drain excess fat away on some kitchen paper and serve immediately.
