Crispy Chicken Goujons & Parmesan Courgette Fritters with Garlic & Herb Mayo



Making your own Chicken Goujons is easy with this simple recipe. I have coupled it with my new Parmesan Courgette Fritters served with a creamy Herb Mayo recipe for a deliciously quick meal.


It's one the kids can help with and I it's also far healthier than any takeaway or processed chicken you may be tempted to buy. On top of that the ingredients used are gut friendly and wholesome.


Ingredients

Serves 4

2 Chicken Breasts

1 Egg


For The Crumb Coating

3 Slices Wholemeal Sourdough Bread

1 Tablespoon Smoked Paprika

1/2 Tablespoon Garlic Granules

1 Teaspoon Mixed Herbs

Ground Black Pepper for seasoning


For The Courgette Fritters

1 Courgette

2 Tablespoons finely grated Parmesan Cheese

Olive Oil Spray


Method

Preheat oven or Air Fryer 180 Degrees


Blend the bread in a food processor blender until it resembles breadcrumbs. Add the paprika, garlic and herbs and season with black pepper. Mux well. Split the crumbs in half and use one half for the chicken.


Cut the chicken into strips for Goujons or chunks for nuggets. Now beat the first egg in a bowl and dip each chicken piece into egg and then into breadcrumbs and place on a tray. Once all the chicken is coated cook for five minutes at 180 Degrees.


Meanwhile wash the courgette,, remove ends and slice about 1cm in thickness. Whisk the second egg and dip your courgette slices into the egg and then into the crumb and place on a baking tray. Cook at 180 Degrees for five minutes.


Remove the chicken and lightly spray with olive oil. Return to the oven and cook for 3 minutes.


Remove courgettes and spray with oil and return to the oven for 3 Minutes.


Remove Chicken again and turn over in the tray. Spray with oil and return to the oven for another 5-8 minutes or until chicken is cooked right through (75 degrees if using s food thermometer)


Remove courgettes turn over and sprinkle each one with a little Parmesan cheese. Return to the oven for 3-5 minutes or until golden and crispy.


For The Garlic & Herb Mayo

Mix 4 Tablespoons Light Mayonnaise with 4 Tablespoons Water and 1/2 Teaspoon Garlic Granules and 1/2 Teaspoon Parsley. Mix well and drizzle over courgettes when serving.
