This tasty dish is perfect for a quick and easy warming midweek meal. Lightly spiced and full of flavour. From pot to plate in minutes and one the whole family can enjoy.
Ingredients
450g Mince Beef (5% fat)
1 Onion finely chopped
1 Red or Green Chilli Pepper Finely Chopped or 1 Teaspoon Lazy Chilli
1 Beef Stock Pot
1 Teaspoon Garlic Salt
1 Teaspoon Desiccated Coconut 1 Tablespoon Medium Curry Powder
1 Tablespoon Tomato Puree
250ml Water
Small Handful Frozen Peas
409g Cooked Wholegrain Rice
Method
Fry the Mince and onion in a non stick frying pan until browned, add the chilli, beef stock pot, garlic salt, curry powder and coconut and fry for a further 2-3 minutes. When fully combined stir in the tomato puree, peas and 250mls water, simmer for 5-10 minutes until water is nearly evaporated.
Stir in the cooked rice cook for a further minute.
Serve on warmed plates.
