Serves 4
3-4 Cooked Chicken Breasts
1 Tin Chopped Tomatoes
3 Tablespoons Mild/Medium Curry Powder
2 Teaspoons Turmeric
2 Teaspoons Paprika
2 Cloves Garlic
1 Teaspoon Ground Ginger
1 Tablespoon Tomato Puree
2 Tablespoons Fat Free Fromage Frais/Natural Yoghurt
Chopped fresh Parsley or Coriander to garnish (optional)
Method:
Mix the tomatoes, curry powder, turmeric, paprika, garlic, ginger and tomato puree together in a non stick pan, add the cooked chicken and bring to the boil, reduce heat and simmer for 10-15 minutes, remove from heat and add the fromage frais/yoghurt. Sprinkle with fresh herbs and it’s ready to serve.
