Four Cheese Egg Muffins

These high protein muffins are lovely as a snack or as part of a main meal and they are so easy to make. Packed with protein, they are very filling and delicious hot or cold.


Ingredients makes 20

Twelve Eggs

100ml unsweetened almond milk or preferred milk

30g Grated Parmesan Cheese

60g Light Cream Cheese

60g Light Feta Cheese

30g Red Leicester Cheese

1 Teaspoon Chopped Chives


Method

Beat the eggs, chives, milk and Parmesan together until thoroughly mixed. Divide into muffin tins. Crumble in the feta cheese then add a teaspoon of light cream cheese into the centre of each one. Top with Red Leicester and bake in a preheated air fryer or oven at 180 degrees for 8-12 minutes or until firm to touch.
