Fruit & Nut Flapjacks

These really delicious flapjacks take minutes to prepare, taste amazing and have an beautiful soft texture, they are ideal as a grab and go breakfast, between meal snack, lunch box filler or after work out boost. Using healthy and nutritious ingredients makes them filling and satisfying. They will be a big hit with the whole family.



Makes 18


200g Porridge

500ml Fat Free Plain Yogurt

2 Eggs

1 Tablespoon Mixed Chopped Nuts

2 Tablespoons Mincemeat

1 Tablespoon Runny Honey

2 Teaspoons Ground Cinnamon

8g Granulated Sweetener

25g White Cooking Chocolate


Method


In a large bowl, mix the porridge, yogurt, eggs, mixed nuts, honey, cinnamon and granulated sweetener with a spoon until fully combined. Line a small baking tray, approx. 10 inch by 6 inch, with greaseproof baking paper. Pour in the mixture and smooth out gently with the back of a spoon. Cook in the oven at 170 degrees for 35 minutes, turning the tray round once during cooking to ensure both sides cook evenly.


Remove from the oven and allow to cool in the tray for 10 minutes before gently lifting onto a cooling rack. Once cooled, melt the chocolate in the microwave for approx. 40 seconds, or in a bowl over hot water. Drizzle over the flapjacks and slice into 18.



Tip: To keep the recipe Gluten Free and Dairy free, use gluten free porridge oats, soya yogurt or preferred alternative and 'free from' chocolate. This dish is naturally very low sugar and sugar free mincemeat is available. For diabetics you may be able to use raw honey depending on your own dietary needs, please check with your health advisor.
