These tasty skewers are ideal for a light lunch and also taste delicious cooked on the BBQ. The flavours from the garlic and lemon work beautifully with the fish and the Parma ham gives it a tasty smoked flavour. They can be made in advance and eaten hot or cold.
Makes 12 Skewers
6 Fish Fillets, cut lengthways
12 Slices Parma Ham
2 Cloves Garlic
1 Unwaxed Lemon
12 Skewers soaked in cold water
Method:
Finely chop the garlic and grate the lemon rind, place into a bowl and squeeze over the lemon juice, removing any pips. Skewer the fish and place onto a large oven proof tray and brush over garlic and lemon marinade. Cover and place in the fridge for 20 minutes or longer if required. Next remove any fat from the ham and wrap around the fish skewers. Grill, barbeque or fry in a non stick pan, for approximately 10 minutes, turning occasionally or until the Parma ham has become crispy on the outside and fish is cooked through. Serve with a crisp salad.
