When I bought myself an omelette maker i knew it definitely wouldn’t be just for the odd ham & cheese or cheese & tomato run of the mill omelette. With my sweet tooth already tingling the obvious first choice had to be lemon & blueberry. I wanted to keep it as light as possible in order to achieve a more pancake like consistency. I have to admit they are delicious.
Ingredients
Makes 4 Omelettes
4 Eggs
4 Tablespoons Granulated Sweetener
2 Capfuls Lemon Flavouring
100ml Oat Milk or your preferred milk
8 Frozen Blueberries per pancake
Method
Heat the imelette maker as per manufacturer’s instructionsz Crack the eggs into a bowl and add the sweetener, lemon flavouring and milk and beat with a fork or hand whisk until full combined.
Fill each if the bottom sections of the omelette maker leaving a small gap from the fill line. scatter 8 blueberries into each omellete and close the lid. Cook for 5-10 minutes (see manufacturers instructions for accurate cooking times). I cooked mine for around 10 minutes to go really crispy on the outside.
Serve warm with sugar free sauce or light cream for an extra special treat.
