Ham & Feta Pancake Stack

A savoury take on ordinary pancakes. These yummy pancakes are sandwiched together with a delicious centre of ham & feta cheese. They are very easy to make and taste so good and also boast a good helping of protein.


Ingredients

100g Flour

300ml Milk

2 Eggs

1 Teaspoon Baking Powder

2 Slices of Ham shredded or finely sliced

100g Feta Cheese

30g Grated Cheese


Mix the flour, milk, eggs, and baking powder together until smooth. Heat a non stick frying pan until it's smoking hot. Spoon a thin layer of the mix into a pan to create 4 small pancakes, smoothing into shape with the back of the spoon. Cook until tiny holes start to appear, flip over and cook for a further 30 seconds. Remove from the pan and repeat process until all the pancake mix is used.


Top a pancake with ham and feta cheese. Add a sprinkle of grated cheese. Place a pancake on top. Return to the pan and cook, flipping over, for another minute or until cheese is melting.


Perfect for breakfast or lunch.
