Italian Meatballs with Garlic & Herb Boodles (Butternut Squash Noodles)


The use of Butternut Squash Noodles in this recipe provides a very tasty and easy to make alternative to pasta. Boodles are available to purchase in most large supermarkets. They are also easy to do at home using a ‘spiraliser’, a popular kitchen gadget, used to create Noodles and Spaghetti from vegetables such as Butternut squash, courgette and carrots.





Serves 4


450g Lean Pork Mince (5% fat or less)

1/2 Onion very finely chopped

1 Clove Garlic very finely chopped

2 Teaspoons Dried Oregano

2 Red Wine Stock Pots

100ml Water

4 Tablespoons Tomato Puree

2 Tins Chopped Tomatoes

3 Bay Leaves

Olive Oil Flavour Low Calori Cooking Spray


Method:


Mix the Pork mince, onion, garlic and oregano together until fully combined and form into small meatballs about 2 inch thick.


Spray a non stick pan with low calorie cooking spray and cook the meatballs until browned on all sides. Add red wine stock pots and 100ml water and simmer gently until liquid is reduced.


Next add the tomato puree and cook for another 2 minutes, add the tin tomatoes and bay leaves reduce to low simmer, cover and simmer for 20 -30 mins stirring occasionally.


BOODLES:


Boodles (Butternut Squash Noodles - available from large Supermarkets)

0r using a Spiraliser/Spiral Slicer cut Butternut Squash into thick lengths then spiralise into thin noodle/spaghetti size ribbons.


200g Boodles per person

1 Teaspoon Oregano

1 Clove Garlic very finely Chopped

Olive Oil Flavour Low Calori Cooking Spray


Place Boodles in a dish cover with clingfilm and microwave for 4 minutes.  


Remove and spray wok/large frying pan with fry light olive oil flavour and add garlic and 1 teaspoon or oregano, stir fry Boodles and add 4 tablespoons of the tomato sauce from the meatballs and stir fry again.  


Place on a warmed pasta dish, meatballs on top and enjoy... serve with 1 tablespoon of fresh Parmesam Cheese - Delicious!
