Lemon & Honey Oat Milk Pancakes

These oat milk pancakes are light and delicious and really easy to make. In this recipe I have used oat milk and oat flour but you can use any flour, wholemeal flour is also a great option and any milk. Top with maple syrup and defrosted frozen fruit for a delicious breakfast or dessert.


Ingredients

Makes 12

100g Flour

300ml Oat Milk

1 Teaspoon Honey

1 Teaspoon Baking Powder

1 Teaspoon Lemon Flavouring

2 Eggs


Mix the flour, milk, baking powder, honey, lemon flavouring and eggs in a bowl until smooth.


Heat a non stick pan until it's smoking hot (use a spray of oil if you wish. Spoon pancake mix into small round pancakes smoothing into shape with the back of a spoon, cook until tiny holes appear and flip over cooking for another 30 seconds /1 minute.


Top with your favourite defrosted frozen fruits and a little maple syrup or honey.


Approx 60 calories per pancake
