Lower Carb Irish Stew

We all love a good Irish Stew and this lower carb version is no exception! To reduce the number of carbs in this recipe I swapped 1/3 of the potato for celeriac, which has around 97% less carbs than potato. You could swap even more of the potato for celeriac or even all the potato!


Ingredients

500g Lean Mince

1 Onion finely chopped

1 kg Potatoes

500g Celeriac

2 Tablespoons Fresh Parmesan Cheese

500g Carrot

2 Beef Stock Cubes

Water to cover

Salt & Pepper to season


Method

Peel and chop the celeriac and cook in a pan of boiling water until soft, drain and leave to one side.


Next peel and chop the potatoes into bite size pieces and put into a pan or pressure cooker. Add the chopped onion. Clean and chop the carrots into small pieces. Season the mince with salt and pepper and form into small meatballs. Add to the pot with the stock cubes


Cover with water until just covering the stew mix and either boil (30-45 minutes) or pressure cook (20 minutes) until the meatballs, potato and carrots are cooked. (Do not stir during cooking).


Place the cooked celeriac into a blender along with the Parmesan cheese and blend until smooth.


Once the stew is cooked stir in the celeriac mash.


This dish tastes even better if made the day before.


Calories 1747 - serve 6 291 calories, serve 8 is 218.


If you made this with all potato and full fat mince the total calories would be 2887 which is a difference of 1140 calories, do 6 servings would be 481 cals and 8 servings would be 361 cals
