Mini Chorizo, Cheese, Bacon and Potato Pies


These little bites are so tasty and really easy to make plus you can use up left over mash to make them. If you prefer to use a standard cupcake tin then you will need to use three slices of chorizo instead of one.


Ingredients

Makes 24-36 mini or 7-9 standard size


300g Cooked Mash Porato (cold)

3 Tablespoons Fresh Parmesan Cheese

2 Eggs

75g Lean Bacon finely chopped

24-36 Slices Chorizo (prepacked thin slices)


Mix the cheese, eggs and bacon into the potato until fully combined.


Place 1 slice of chorizo into a mini cupcake tray and press down or 3 slices into a standard cupcake tray.


Fill with mix. Pressing down to fill the cup. Coo in the air fryer at 180 degrees for 14 minutes or in the oven for 20-25 minutes or until golden brown and piping hot.


Leave to cool for 5 minutes in the tray before serving.
