Ingredients:
1 tablespoon olive oil
1 onion, diced
2 Teaspoons garlic granules or 2 cloves crushed
1 red and 1 yellow pepper finely chopped
1 can black beans
1 can kidney beans
1 can chickpeas
1can chopped tomatoes
2 tablespoons Nando's Peri-Peri sauce
2 teaspoons paprika
1 teaspoon ground cumin
1 Tablespoon Tomato Puree
Heat the olive oil in a large non stick frying pan
and fry the onion and peppers until soft. Next add the tomato purée, black beans, kidney beans, chickpeas, and chopped tomatoes to the pan. Stir well to combine and simmer until sauce starts to thicken. Now add Nando's Peri-Peri sauce, paprika, and ground cumin to the pan and simmer on a low heat for 10-15 minutes
and serve as a side dish or as a main dish with cooked bulgur wheat or whole grain rice.
