Night Time Nibbles & Perfect Picnics


I thought I would do a little alternative to those high calorie snacks that we often eat in the evenings or take on picnics. This is the most common time to over indulge and derail all your hard work. So ditch the crisps and sausage rolls and swap to these low calorie alternatives, Your tastebuds will thank you and your body will love you!


Courgette Boats


Makes 18 Approx 32 calories each

3 Courgettes

50g Smoked Ham Pieces

30g Grated Cheese


Method

Wash the courgettes, cut off the ends then cut down the centre length ways. Scoop out the flesh from the centre with a teaspoon. Cut each half into 3 equal pieces. Fill the centres with little pieces of ham and top with grated cheese. Place on a baking tray and cover with tin foil. Cook for 10 minutes in the oven or air fryer 180 degrees then uncover and cook for another minute or two or until the cheese is lightly browned and courgette is soft.



Cheese & Onion Aspargus Blankets


Makes 8 Approx Approx 28 calories each

8 Asparagus Spears

2 Large Spring Onions

30g Lightest Garlic & Herb Cream Cheese

2 Slices Serrano or Parma Ham


Method

Pat Boil the Asparagus for a couple of minutes in a pan of boiling water or place in a microwaveable bowl, cover with clingfilm and cook for 2 minutes. Clean the spring onions, remove the roots and slice down the centre. Spilt each half into 2 layers and fill the centre with cream cheese. Place an asparagus spear into the centre. Tear each of the Parma ham slices in to 4 and wrap around the outside. Cook in the oven or air fryer at 180 degrees for 8-12 minutes or until Parma ham is crispy and asparagus is fully cooked.


Garlic Mushrooms wrapped in Serrano Ham


Makes 12 Approx 12 calories each

12 Chestnut Mushrooms

3 Slices Serrano or Parma Ham

30g Garlic & Herb Lightest Cream Cheese


Method

Clean the mushrooms and remove stalks. Fill each centre with cream cheese and wrap in Parma Ham. Place on a baking tray and wrap in tin foil. Cook in the oven or air fryer at 180 Degrees for 5 minutes. Remove tinfoil and cook for a further 3-5 minutes or until the ham is lightly crispy and mushrooms are fully cooked.


Chilli Lettuce Boats


Makes 12 Approx 85 calories each

400g Lean Mince Beef or Soya Mince

1 Onion

1 Tin Chopped Tomatoes

1 Tin Mixed Beans or Kideney Beans

1 Beef Stock Pot/Cube

3 Tablespoons Tomato Puree

2 Traspoons Smoked Paprika

1/2-1 Teaspoon Chilli Powder

12 Baby Gem Lettuce Leaves

30g Grated Cheddar Cheese


Method

Finely chop the onion and fry with the mince in a non stick frying pan until browned. Add the tomato purée and fry for a further minute, mixing well. Next add the beans, stock pot and tinned tomatoes along with the paprika and chilli powder. Simmer until chilli has thickened. Remove from heat and allow to boil for 5 minutes. Add a spoonful of chilli to each lettuce leaf and sprinkle over a little grated cheese.
