This easy to make dessert tastes delicious and can be ready to serve in just over an hour. I’ve made the cheesecake with vanilla flavouring for an authentic taste but you can add any flavour. A great one for the kids to make and with only a few ingredients it definitely doesn’t break the bank.
Ingredients
Makes 6-8
6 Low Fat or Gluten Free Digestive Biscuits
250g Greek Style Yogurt
165g Lightest Philadelphia or Low Fat Cream Cheese
2 Tablespoons Granulated Sweetener
2 Teaspoons Vanilla Flavouring
Method
Crush the digestive biscuits in a blender or food processor or alternatively place in a food bag and crush with a rolling pin.
Divide biscuit into sundae dishes or ramekins. Press down with fingers or the back of a spoon.
In a separate bowl mix the cream cheese, yogurt, sweetener and flavouring together by hand,
Carefully spoon mixture on biscuit base. Place in the fridge for one hour to chill.
Tips Try using different flavourings and top with fresh fruit or crushed frozen fruit.
