When my niece asked for a recipe to use up cabbage I immediately thought of Pan Haggerty. This tasty dish is really easy to make and perfect for the colder months. It is also a good way to use up left over cabbage or potatoes. It's hearty ingredients work well together and the eggs add extra protein. For a the meat eaters it is particularly delicious with added cooked bacon or ham.
Ingredients
Serves 4
Approx 300 cals per serving
1kg cooked potatoes chopped into bite size pieces
1 green cabbage, shredded
1 onion finely chopped
2 garlic cloves, crushed
3 eggs, lightly beaten
3 Tablespoons fresh Parmesan cheese
Salt and freshly ground black pepper
Spray on non stick pan with oil and fry the onions until soft, add the cabbage and cook for a further few minutes until it starts to wilt. Add the garlic and the potatoes and and mix well. Fry for another few minutes until the potatoes are hot.
Next quickly stir in the eggs and Parmesan cheese. Season with a little salt and pepper and Fry for another few minutes then serve.
