Pan Pizza



This has to be one of the best pizza recipes I have ever made. The base is made with just 3 ingredients and using fat free Greek style yogurt makes it a much healthier choice. It is light and soft and can be perfectly reheated (if you have any left over that is!)


I first made it in a non stick pan at a cooking class I was running as there was no oven available and it turned out so perfectly that it deserved to be a recipe in its own right.

It’s a great way to introduce a healthier version of a popular take away and perfect for the kids to get creative with. Best of all it can be on the table in less than 15 minutes!

Makes 1 Large Pizza


Ingredients


For the base

100g Self Raising Flour plus some for dusting

100g Fat Free Greek Style Yogurt

1Teaspoon Baking Powder


Basic topping ingredients

4 Tablespoons Tomato Purée

Toppings of Your Choice

1/2 Teaspoon Garlic Granules

1/2 Teaspoon Oregano

1 Teaspoon Dry Semolina (optional)

50g Grated Cheese


Heat a large non stick frying pan until smoking hot.


Mix the flour, baking powder and yogurt together to form a dough. Tip onto a floured surface, sprinkle with flour and using a floured rolling pin roll gently to form a round base to fit the size of your pan. Gently roll the base around the rolling pin and unroll into the hot pan.


Cook for two minutes or until it starts to thicken and gently rise, turn over in the pan and cook for a further two minutes.


Spread the tomato puree on top of the base, next add your favourite toppings, sprinkle with grated cheese. Finish with a sprinkling of garlic granules and oregano. Dust the edges with semolina (if using).


Place the pan under a grill to melt the cheese or alternatively slide onto a baking tray and cook in a preheated oven at 200 Degrees for 8 Minutes.
