Panisses - Chickpea Fries

My sister Andrea asked me if I'd ever tried chick pea fries and of course I hadn't but I knew I needed to. They are amazing and a favourite in the South of France. I researched a few recipes and adapted them to suit my own health goals and voila, they were ready in no time (after the chilling process ) and I must say they were absolutely delicious! A real game changer! You are going to love them!


Ingredients serves 4

460ml water

1 teaspoon olive oil

1/2 Teaspoon Salt

85g chickpea flour, sifted

1 tablespoon olive oil & 1 Teaspoon Butter for Frying


Optional flavour

1/2 Teaspoon Garlic Granules

1/2 Teaspoon Oregano


Method

Grease an 8x8 inch baking dish with a little olive oil and leave to one side.


Pour the water into a medium-sized pot over a high heat and add the salt and teaspoon of olive oil. Add the herbs and garlic if using,


Once boiling, reduce the temperature to simmer. Whisk in the chickpea flour with a hand whisk or wooden spoon for 5-7 minutes. You must continue to stir the mixture to prevent from burning.


Remove from the heat and empty the mixture into the prepared baking pan and smooth out the 'dough' evenly.


Transfer the mix to the fridge and let chill at least 4 hours or overnight.


Once chilled, cut into fries with a sharp knife. Heat 1 tablespoon olive oil and one teaspoon butter in the bottom of your airfryer at 200 degrees for 1-2 minutes, lay the fries onto the tray, Dust with1 teaspoon salt and 1/2 teaspoon garlic granules & 1/2 teaspoon oregano and fry for 8-12 minutes or until crispy and golden. Shaking the tray occasionally during cooking will ensure even cooking.
