Powerhouse Curry





This rich and creamy curry is simply delicious and packed full of healthy boosting spices! Using low fat coconut milk makes this a favourite for the whole family.


Powerhouse Curry


Ingredients 


1 Teaspoon Olive Oil

3-4 Chicken Breast Chopped

1 Onion Chopped

400g Low Fat Coconut Milk

1 Teaspoon Xanthan Gum or 2 teaspoons Cornflour

1-2 Tablespoon Medium Curry Powder 

1 Teaspoon Ground Coriander 

1 Teaspoon Coriander Leaf

2 Teaspoons Turmeric

½ Teaspoon Ginger

½ Teaspoon Cumin

2 Teaspoon Lazy Garlic or 2 Cloves Garlic

1 Chicken or Vegetable Stock Pot

2 Teaspoons Ground Almonds

2 Teaspoons Honey


Method


Brush a large pan or wok with olive oil and heat. Add the chicken and cook for a few minutes. Add onions and fry for a further 2 minutes. 


In a bowl mix the xanthan gum, curry powder, coriander, turmeric, ginger. ground almonds and cumin together then pour into the pan. Next add the coconut milk. Add the garlic, chicken stock pot and honey and simmer gently until chicken is cooked through (75+ on a thermometer).


Serve with wholemeal rice.

Coconut milk


Coconut milk contains medium-chain triglycerides (MCTs), which researchers have linked with weight loss. MCTs stimulate energy through a process called thermogenesis, or heat production.

Coriander

Cumin

Contains antioxidants. Cumin seeds contain naturally occurring substances that work as antioxidants.

Cumin anticancer properties and can help treat diarrhea. It also helps control blood sugar and Fights bacteria and parasites. It had an anti-inflammatory effect., May help lower cholesterol and aid weight loss.


Turmeric 

Turmeric and especially its most active compound curcumin have many scientifically-proven health benefits, such as the potential to prevent heart disease, Alzheimer's and cancer. It's a potent anti-inflammatory and antioxidant and may also help improve symptoms of depression and arthritis.


Garlic

Garlic Contains Compounds With Potent Medicinal Properties. Garlic Is Highly Nutritious containing very few calories.

Ginger

Curry Powder
