Ratatouille Soup

This delicious, warming soup Is so easy to make and really inexpensive too. Ready in minutes, it can also be frozen and reheated. A clear winner for the whole family to enjoy.





Ingredients 


1 Tin of supermarket own brand Ratatouille 

1 Tin Tomatoes

1 Vegetable Stock Pot

½ Teaspoon Garlic Granules

Pinch of Chilli Flakes (optional)

100ml Water 


Method


Simply place the Ratatouille, tomatoes, vegetable stock pot, garlic granules, chilli flakes (if using) and water into a blender and blitz until smooth. 


To make it into a pasta or bolognaise sauce just omit the water.


Enjoy as a soup with sliced porridge bread (recipe available at withloverecipes.com) or use as a sauce over pasta, mix with cooked mince for bolognaise or use as a pizza topping on sliced toast and top with your favourite topping and sprinkle with light cheese and grill.
