Slow Cooker Pork Curry





This slow cooked dish is simply delicious. The pork is so tender it just melts in your mouth and you can even use left lover pork from your Sunday roast if you want instead of using pork pieces. If you do not have a slow cooker it csn can also be cooked in a tagine or casserole dish covered with a lid or tinfoil and cooked at 160 Degrees for 2 -3 hours, stir occasionally.

Ingredients


400g Pork Pieces

1 Tin Coconut Milk

1 Chicken Stock Pot

2Tablespoons Curry Powder

1 Tablespoons Garam Masala

1/2 Teaspoon Ginger

2 Tablespoon Garlic Granules

1 Tablespoon Ground Almonds

2 Tablespoons Corn Flour


Method


Place the pork pieces into the slow cooker. Add the coconut milk, chicken stock pot, curry powder, garam masala, ginger, garlic granules and almonds. Mix the cornflour with a little water until smooth. Stir into the curry.

Cook on high for 3 hours stir occasionally to ensure all ingredients are combined.
