3 Large Potatoes Chopped into small pieces
Cooked Ham Chopped into Small Pieces
6 Eggs
Tub of Quark (skimmed soft cheese)
Salt & Black Pepper
Fry light
2 Teaspoons Smoked Paprika
Method:
Cover with cling film and cook in the microwave for 3 minutes. In a another bowl mix the eggs, salt and black pepper, paprika and quark until completely mixed and then add the potato and ham and mix thoroughly. Spray a muffin tin with fry light and spoon in the mix leaving a gap from the edge as the muffins will rise as they cook. Cook in a medium oven around 165C for around 25-35 mins until muffins are firm in the middle. Can be served hot or cold.
