This delicious dish has been created for my beautiful niece Taniia who wanted a new vegan recipe. High in Protein and with little preparation, this mixed bean cassoulet is sure to be a hit with the whole family. Smoked paprika gives it a warm smokey undertone which mixed with a delicious and creamy red wine sauce. It tastes amazing!
Serves 2 as a Main or 4-6 as a Side
Ingredients
1 Cup Frozen Onion or 1 Medium Onion Finely Chopped
1 Cup Frozen Mixed Peppers or Equivalent in Fresh Chopped Mixed Peppers
2 Cloves Finely Chopped Garlic
1Tin Mixed Beans in Water
2 Teaspoons Smoked Paprika
1 Red Wine Stock Pot
2 Tablespoons Tomato Purée
2 Tablespoons Single Soya Cream
Method
Fry the onion and peppers in a non-stick pan, add the chopped garlic and the full tin of beans including the water in the tin. Stir in 2 teaspoons of paprika and add the red wine stock pot. Simmer and stir gently until the stock pot has melted. Add the tomato purée and stir well, add the cream, stirring gently until fully combined.
Serve in a warned pot with rice, jacket potato on toast or just on its own....delicious
