This recipe is perfect for lunch or dinner. The meatballs are so versatile they can be served with pasta or on a wholemeal sub roll for a delicious dinner or lunch. One the whole family will love. I used sweet potato wraps from Bfree range for keep the recipe gluten free and lower calories. By adding salad to the wraps you can easily serve 4 people.
Serves 2-4
Ingredients
250g Lean Minced Beef
1 Teaspoon Lazy Garlic
1 Teaspoon Laxy Chilli
1 Teaspoon Mixed Herbs
1 Tablespoon Fresh Parmesan Cheese
4 Tablespoons Tomato Puree
125ml Red Wine (I used alcohol Free)
1 Tin Chopped Tomatoes
2-4 Sweet Potato Wraps or your preferred choice.
30g Grated Cheese
Method
Put the mince into a bowl and add garlic, chilli, mixed herbs and Parmesan cheese and mixed by hand making sure all the ingredients are mixed together. Roll into small balls.
Fry the meatballs in a non stick pan until browned and add he red wine and simmer, next add the tomato puree. Gently stir around meatballs until a darker red. Now add the chopped tomatoes and gently stir, simmer for 3-5 minutes, stirring occasionally.
Once the meatballs are cooked place meatballs into each wrap and top with 15g of grated cheese. Roll up the wraps and serve.
Tip: keep remaining sauce and stir through pasta or use it to add richness to chilli or bolognaise sauce.
