Sticky Marmalade BBQ Ribs


This recipe is simple and delicious. I wanted to make bbq ribs and would normally do the sauce with apple juice but I didn’t have any, so I developed the recipe using orange marmalade as one of the main ingredients.. this gave the ribs the perfect sweetness and stickiness.


I cooked them in the oven but you can also cook them on the bbq.


Ingredients

Serves 4-8

1kg Ribs

3tbs orange marmalade

3 tbsTom Puree

1 tbs honey

1 tsp garlic granules

1 tbs paprika

1 tsp Dijon mustard

1 tsp lemon juice

100ml water


Place the marmalade, tomato purée, honey, garlic, paprika, mustard, lemon juice and water into a non stick pan and heat gently, stirring well for 3 minutes.


Place the ribs onto a tray and coat with half the sauce. Cover with tinfoil and oven cook 180 degrees for 30 minutes.


Remove from the oven and drain off any liquid. Coat the ribs with the remaining sauce and cook uncovered for a further 15-20 minutes or until browned. If using a bbq simply coat the ribs and bbq , turning frequently until browned and thoroughly cooked.


You can reduce or increase final cooking time depending on the size of the ribs .


Approx 300 cals if serving 4, 150 cals if serving 8
