Shortbread is definitely one of my favourites, unfortunately they tend to be pretty high in calories as well as sugar. Here I’ve swapped the sugar for sweetener and use semolina as well as flour to create a delicious lower calorie, sugar free treat.
Cutting the shortbread with a little heart cutter makes these little treats perfect for Valentine’s Day, plus these little hearts only average around 10 calories each, so you won’t feel guilty for eating more than a couple. Although I do have a heart cutter I found a use for recycled heart shape candles. The ones I bought had a little heart shaped holder which was perfect to use as a cutter. If you prefer you can just cook in a small oven tray and cut into squares, if doing this score the square shapeS out once you have the mixture in the tray and then cook.
Ingredients
150g Dry Semolina
130g Plain Flour 50g Butter
10g Granulated Sweetener
Method
Melt the butter in a bowl in the microwave for a few seconds or in a pan on a low heat. Once melted, stir in the semolina, flour and sweetener.
Mix the biscuit base with your hands, squeeze together to help it bind.
Place some grease proof paper on a clean surface. Spoon mix onto paper, cover with a second piece of grease proof and gently roll to about 1/4 centimetre. Carefully cut out hearts and use a knife to lift them onto a lined oven tray. Bake in a preheated oven at 150 Degrees for 15-20 minutes or until lightly golden.
Remove from oven. Leave to cool completely.
Decorate with a drizzle of melted chocolate or just as they are. Store in an airtight container.
