Sweet Chilli Noodles


This delicious, easy to make , dish is so versatile. You can can eat the Noodles on their own or add your own cooked chick, beef, salmon or prawns or for an extra healthy dish try adding cooked onions, peppers and mushrooms or Chinese stir fry vegetables for a quick and tasty vegetarian meal or side.




Serves 4


Ingredients


1 Packet Dried Egg Noodles + Boiling Water to cover

1 Teaspoon Lazy Chopped Garlic

1 Teaspoon Lazy Chopped Chilli

1/4 Teaspoon Ground Ginger

4 Tablespoons White Wine Vinegar

500ml Water

2-3 Teaspoons Granulated Sweetener

1 Tablespoon Tomato Purée

1 Teaspoon Xanthan Gum


Method


Place the noodles in a large pan and cover with boiling water. Cover the pan and leave to one side.


In a large non stick frying pan add the garlic, chilli and ground ginger, mix in the white wine vinegar. Now add the water, sweetener, tomato purée and Xanthan gum. Bring to the boil, then turn down the heat, stirring continuously until the Xanthan has completely melted and the sauce has started to go glossy and thicken.


Remove from the sauce from the heat and drain the noodles. Toss the noodles into the sauce and serve on warmed plates.


Note: Add cooked meat or vegetables before tossing the noodles into the sauce.


Xanthan gum is usually found in the gluten free baking section.
