These pancakes are so quick and easy to make, they will be ready in minutes. Using a combination of wholemeal and soda bread flour along with unsweetened almond milk makes them a healthier choice and at only 35 calories per pancake you can easily add them into your day. Delicious with Parma Ham & Maple syrup or your favourite Fruits or simply with a squeeze of fresh lemon and a touch of granulated sweetener (I like Xylitol which is a natural sweetener with a crunch like sugar.)
Ingredients
Makes 25 pancakes (35 cals each)
125g Wholemeal Bread Flour
100g Soda Bread Flour
1 Egg
400ml Unsweetened Almond Milk
10g Granulated Sweetener
Teaspoon Flavouring of your choice
Mix the flours together in a bowl. Add the egg, milk, sweetener and flavouring and whisk by hand until smooth.
Make sure your pan is hot and spoon in a small amount for each pancake (around 1/2 small ladel) and cook until bubbles form on top. Turn over pancake and cook for a further minute, then serve.
Tip: Top with fresh or frozen fruits with a drizzle of maple syrup or why not try frying Parma ham and top with Maple syrup for an Authentic American Breakfast dish.
