400g Sweet Potato
400g White Potato
2 Eggs
1 Teaspoon Oregano
1 Tablespoon Fresh Parmesan Cheese
Fry light Spray
For the Pizza Sauce:
2 Tins Tomatoes or Passatta
2 Cloves Chopped Garlic
5 Tablespoons Tomato Puree
1 Onion Chopped
2 Teaspoons Paprika
2 Teaspoons Dried Oregano
For the Cheese Sauce Topping:
40g Light Mozzarella
1 Tablespoon Fresh Parmesan Cheese
25g Primula Cheese or 3 Laughing Cow Light Cheese Triangles(grated)
1/2 Tub Thick Quark
To make the base:
Grate the potatoes and mix together in a large bowl, whisk the eggs with a fork and add mix into the potato along with the oregano and one tablespoon fresh Parmesan cheese. Line a baking/pizza tray and cook in a hot oven 200-220 for 20 minutes, remove and turn over onto the tray and return to the oven for a further 10 minutes.
To Make the pizza sauce:
In a blender/food processor, add the tomatoes, 2 cloves garlic, tomato puree, paprika, onion and oregano, blend until smooth.
To make the Cheese Sauce:
Grate the Mozzarella and mix with the quark, Parmesan and Primula/laughing cow to form a thick sauce.
NB you can spoon tomato puree on the base before cooking for an even richer flavour.
