Sweet & Spicy Salad With Garlic & Herb Dressing

Summer’s coming…

We may have lost an hours sleep this month but on the upside it brings lighter mornings and brighter evening. That little bit of extra daylight may just be the inspiration you need to go out for that early morning or evening stroll, boosting your metabolism and burning extra calories as you go.

No one wants to be covering up in baggy jumpers or big cardigans in a couple of months time when the sun splits the skies (even if it is only two days in July!)

So embrace the opportunity and start eating a rainbow of colours to brighten your days, boost your moods and melt those lb’s away.

Adding a mixed salad or a little extra fruit or vegetables into your main meals is a sure fire way to see those scales smile back at you.

To really boost your weight loss try keeping any ‘beige’ coloured foods like pasta and rice or potatoes to a 1:4 of your plate, fill the other ¼ with lean protein foods, for example lean meats, eggs, and fish and fill half your plate with your ‘rainbow’ of colours. Keep any dressings or sauces as fat free as possible and done be afraid to ‘spice it up’. Adding a few chilli peppers or jalapeños won’t just add extra flavour but they will give your metabolism another little boost.



Sweet & Spicy Salad With Garlic & Herb Dressing


Ingredients


Serves 1

¼ Fresh Iceberg Lettuce

1 Tomato

Four Slices Pickled Beetroot

1 Small Pickled Gherkin

4 Slices Jalapeño Peppers

1 Chargrilled Red Pepper

Slice of Fresh Pineapple

Small handful Creas

½ Small Onion Slices


Dressing

1 Tablespoon Extra Light Mayonnaise

2 Tablespoons Water

Pinch Garlic Granules

⅓ Teaspoon Dried Parsley


Simply slice/chop all the ingredients and toss together. Mix the mayonnaise and water together and stir in the garlic and parsley. Leave to stand for 5 minutes then pour over salad. Delicious!
